Mediterranean Tuna Farro Salad
Here is a little salad I put together during #stayathome. It’s super filling and delicious and makes enough for at least 4 servings. Also, you can sub for whatever you have in the pantry and fridge! Get creative with it.
Ingredients:
8oz of dried farro
2 4oz cans of tuna in olive oil
1 tsp dried basil
1 can of garbanzo beans
1 small shallot, minced
½ cup of marinated artichokes, chopped
¼ cup sliced kalamata olives
½ cup of grape tomatoes
¼ cup fresh chopped parsley
Feta for topping
The Dressing: (this one you’ll have to mix and taste as you go to your preference so start off with less and add more)
¼ cup olive oil
¼ cup red wine vinegar
1 tsp Mustard
1 tsp Honey
Pinch of dried basil
Pinch of dried oregano
Salt
Pepper
The How To:
Bring a pot to boil. Salt really well. Add the farro. Cook for 10-12 minutes. You want to make sure it still has a bite to it. While it’s cooking, start mixing your dress. Set aside, begin chopping the remaining ingredients Once the farro is cooked, transfer to a large bowl and allow to cool. Sautee the two cans of tuna, seasoning with salt, pepper and dried basil. Set aside and allow to cool. Once everything is cooked, add all the ingredients and dressing and toss. Serve room temp or cold. Top with extra parsley and feta.
