B’s Banana Bread

Everyone loves a good banana bread, am I right? If you’re not feeling the chocolate chips, try swapping them out for blueberries. It’s DIVINE!

Ingredients: 

  • 2 cups of flour 

  • ¾ tsp of baking soda 

  • ½ tsp salt 

  • ¾ cup granulated sugar (or bakers sugar) 

  • ¼ cup softened, room temp unsalted butter  (+1 tbsp for greasing) 

  • 1 cup of ripened, mashed bananas 

  • 2 eggs, room temp 

  • ½ cup vanilla or greek yogurt 

  • 1 tsp vanilla extract (optional) 

  • 1-2 cups of chocolate chips (If subbing with blueberries: 2 cups fresh blueberries, tossed in flour) 

The How To: 

Preheat your oven to 350 degrees. Grease a loaf pan with butter and then lightly dust with flour. In a medium bowl combine the flour, baking soda and salt and whisk together. In another larger bowl, beat the butter for a few seconds, then add the sugar and beat together until fluffy and a pale yellow color.  To this, add the bananas, eggs, yogurt and vanilla.  Once combined, add half of the flour mixture, combine, and then add the remaining and mix on low until completely combined. Gently fold in your blueberries. Our mixture into your greased loaf pan. Press a few extra berries on top of the batter for fun. Bake for 50-60 minutes, until a toothpick inserted into the center of the loaf comes out clean. Cool for 10-15 minutes before serving.
