Detox Vegetable Soup

I call this a detox soup! This is my version of Nocrumbsleft Italian Wedding soup recipe. (if you don’t follow her, you should!). It’s packed with nutrients, lots of veggies and its seriously, insanely GOOD. Ya’ll know I love a good soup recipe.

Ingredients

2lbs of spicy Italian chicken sausage 

1 container of mirepoix mix from Trader Joe’s

2 leeks, chopped 

3-4 garlic cloves

2-3 cartons of chicken stock (64-80 oz) 

3 zucchini, cubed 

2-3 cups of chopped kale 

½ cup of chopped parsley

1 ½ cups of cauliflower rice 

Juice of 1 lemon 

Olive oil for cooking 

Salt + Pepper to taste

The How To: 

Start off by heating up a dutch oven. Add your olive oil and begin cooking your mirepoix mix and. Cook it for between 15-20 minutes. Season with salt and pepper half way through and add your leeks and garlic.  In the meantime, begin cooking your sausage in a separate skillet. Once cooked, set aside.  Once mirepoix is cooked and it has softened and darkened, add your stock and bring to a boil.  Add back in your cooked sausage, zucchini and cauliflower rice. Let that cook for about 7-10 minutes. Finish off by adding the kale, lemon juice and season to taste with salt and pepper.
