Turkey Zucchini Burgers

These are such great burgers to make a big batch of and just keep in the fridge for easy mid-day lunches. Just heat them up and serve with a side salad. THAT EASY. 

Ingredients: 

  • 1 lb ground turkey

  • 1 zucchini, grated 

  • ¼ cup chopped cilantro 

  • ½ cup chopped mint 

  • 1 egg 

  • 3 spring onions 

  • 3 garlic cloves 

  • 1 inch of ginger, grated

  • 1 tsp salt 

  • 1 tsp pepper 

  • *Makes about 10 small patties 

The How To: 

In a large bowl, mix all the ingredients until really well incorporated. I like to use my hands to mix it all together as it allows me to really make sure everything is incorporated well. Form small, even patties about 2-3 inches.  Heat up a skillet to medium heat. Cook about 4-5 minutes each side until done. If you want to be 100% sure the patties are cooked through, you can pop them into the oven at 350 for 10 additional minutes.
